This can be made ahead of time and chilled in the fridge for when you are ready to serve.
Using a small sharp knife slice down the center of the vanilla bean, scrape the seeds out and add them to a small saucepan along with the bean pod for extra flavor. Add all of the remaining Ginger Honey Syrup ingredients into the saucepan and place on a low simmer for 10-15 minutes or until it starts to thicken. Take it off the heat and let it cool down.
Once it’s cooled strain to remove the grated ginger and vanilla pod.
Peel the pears and remove any seeds or stems, roughly chop them up and add them to a blender or food processor. Add a dash of the soda water and pulse until they are a smooth puree constancy.
Spoon in the ginger honey syrup into pureed pears and pulse once more to combine.
In a large serving jug add the pear mixture followed by the soda water. Using a spoon with a long handle stir to combine.
Add a good handful or two of ice and slices of fresh pears to serve.
