Honey spiced pear mock-tail

This pear mocktail recipe is easy to make, delicious and is impressive for a celebration. Made from fresh pears, flavoured with honey, vanilla and the spice of fresh ginger.
For an adult version use half soda water (375ml) and half sparkling wine (375ml) or for a different style add half ginger ale (375ml) and half soda water (375ml) and about 60ml of whisky (or as much whisky to your liking).
 2 pears. We used Packham Pears for this recipe
 750 ml soda water
Ginger Honey Syrup:
 2 tsp fresh ginger, grated
 3 tsp honey
 ½ tsp cinnamon powder
 1 vanilla bean scraped (or 1 tsp vanilla essence)
 1 lemon, juiced
 4 tbsp tbsp fresh navel orange juice
Garnish:
 1 extra pear thinly sliced. We used Packham Pears for the garnish.

To prepare the Ginger Honey Syrup:

This can be made ahead of time and chilled in the fridge for when you are ready to serve.

Using a small sharp knife slice down the center of the vanilla bean, scrape the seeds out and add them to a small saucepan along with the bean pod for extra flavor. Add all of the remaining Ginger Honey Syrup ingredients into the saucepan and place on a low simmer for 10-15 minutes or until it starts to thicken. Take it off the heat and let it cool down.

Once it’s cooled strain to remove the grated ginger and vanilla pod.

Peel the pears and remove any seeds or stems, roughly chop them up and add them to a blender or food processor. Add a dash of the soda water and pulse until they are a smooth puree constancy.

Spoon in the ginger honey syrup into pureed pears and pulse once more to combine.

In a large serving jug add the pear mixture followed by the soda water. Using a spoon with a long handle stir to combine.

Add a good handful or two of ice and slices of fresh pears to serve.
