1 tbsp extra virgin olive oil

1 tsp Dijon mustard

1 tbsp lemon juice

2 tsp onion powder

Salad

2 pears, sliced, cored

½ cup cooked quinoa

90 g marinated feta, crumbled

120 g packet pomegranate seeds

200 g mixed leaves

Dressing

Whisk all dressing ingredients in a jug, set aside

Salad

In a large mixing bowl, combine all ingredients

Drizzle with dressing and mix to combine
